Mate is prepared in 4 simple steps:

1. Fill the cup (called a calabash) with yerba mate 3/4.

2. Cover the calabash with your hand. Turn it over and shake it to form a “mountain” of mate on one side of the gourd.

3. Pour cold water into the hollow of this mountain and insert your bombilla (taking care to block its end with your thumb).

4. Add hot water (non-boiling) to the hollow of the mountain to infuse the mate.
